In compliance with State and federal laws, the Town of Holly Springs developed a Fats, Oils, and Grease (FOG) Management Program. This program aims to educate the public and business owners about the problems associated with grease and grease accumulations in wastewater lines.
FOG in wastewater can decrease the capacity of wastewater lines by cooling and congealing inside them, eventually causing blockages and overflows, a concern for the Town’s wastewater collection system. Cooking establishments are significant sources of FOG due to the amount of grease used in cooking and other food preparation work. Improper disposal and cleanup practices allow FOG to enter the wastewater collection system.
